So, my phone will cease working in 2016, because Telstra won't be offering 2G coverage any more? Is that right?

The guy at the Telstra shop was not terribly helpful, and I was wondering what the reason behind this is, oh tech savvy friends?

It sounds like it depends how old your phone is, according to this: http://exchange.telstra.com.au/2014/07/23/its-time-to-say-goodbye-old-friend/

Relevant paragraph: "We have not sold a 2G only device for several years, which means that if you are using our 2G network you may already have a 3G or 4G compatible devices and will only require a new SIM card. If you think this applies to you, we encourage you to come down to your local Telstra store to swap your existing 2G SIM card for a new one at no extra cost."

Basically, so few devices are using 2G anymore, so it's not viable to keep it going, sounds like the gist of 'why'. Good luck!
